Found North Tasting at Subourbon – A Masterclass in Blending

We’re kicking off another Craft Whiskey Collective evening with one of the most exciting brands in whisky today: Found North. This isn’t hype — Found North has turned the world’s perception of Canadian whisky on its head through precise, intentional blending and top-tier finishing techniques. These aren’t sourced barrels thrown together — they’re meticulously selected and blended by hand, batch by batch, with an obsessive level of detail.

Why Found North Matters:

Forget what you think you know about Canadian whisky. Found North is proof that blending is not a shortcut — it’s an art form. Co-founder and Head Blender Nick Taylor has built a brand that whisky geeks and purists alike now chase hard. Their whiskies — all cask strength and non-chill filtered — often fetch double or more their MSRP on the secondary market. And there’s good reason: they’re some of the best-blended whiskies being produced today.

At this event, we’ll explore the technical side of Found North’s approach — how they source 100% corn, rye, and barley distillates distilled to high proofs, aged up to 27 years in Canada’s extreme climates, and blended with precision. They’ve mastered finishing, too — using ex-Cognac, Moscatel, and new American oak casks, to name a few, to dial in complexity without covering up the quality of the base whisky.

Tasting Lineup:

  • Batch 011 – A 8-whisky blend ranging from 18 to 24 years old, with a high ratio of corn balanced out by rye and malted barley components - this one is shockingly delicious.

  • Peregrine 2024 – Built from whiskies aged 21 to 25 years, finished in Cognac and new oak, showing off just how deep and layered Canadian blends can be.

  • Hover Hawk: First Flight – A limited release featuring 15–27 year corn with younger rye for structure, finished in Moscatel and new oak.

  • Three Single Barrels — These are not available anywhere in the Illinois market.
